Macaroon baked plums
4 plums, halved
3/4 cup desiccated coconut
1/4 cup caster sugar
1 egg white
1 tsp vanilla extract
Vanilla icecream, to serve
Preheat oven to 180C.
Place plums, cut-side-up, in a baking dish.
Combine coconut, caster sugar, egg white and vanilla in a bowl and mix well.
Spoon the mixture into the plums and bake for 15 minutes or until coconut mixture is golden.
Serve warm with icecream.
