Lamb Kofta on Wheat Salad
Meat Skewers:
500gm lamb mince
¼ cup chopped fresh mint leaves
½ teaspoon ground cumin

½ Cup burghal wheat, mix with 1 cup boiling water and leave to soften
When it has cooled, drain and then mix with:
3 tomatoes, diced
Can chickpeas, rinsed and drained
Mint and coriander (I prefer parsley) finely chopped – be generous
Avocado, diced
Red onion, finely diced
Salt & pepper
Lemon juice
Olive oil

Mint/Yogurt Dressing:
1/2 cup plain yogurt
1 clove garlic, minced
2 T mint finely chopped
Salt and Pepper
Mix skewer ingredients and then form into a
sausage shape around one end of a pre-soaked
wooden skewer. Repeat with remaining mixture.
You can just make them into patties instead if
you like. BBQ or pan fry until cooked through.

Mix salad ingredients.

Serve meat skewers on top of salad and garnish
with chopped herbs.

Drizzle over mint/yogurt dressing.
