Crsipy Baked Salmon
400gm Salmon fillets de-boned
2 Tablespoons garlic aioli
1/2 cup panko Breadcrumbs
1/4 cup finely grated parmesan cheese
Salt and Pepper
Add 1 teaspoon crushed capers to garlic aioli.
Replace Panko Breadcrumbs with crushed nuts or almond meal.
Line a baking sheet with baking paper.
Heat oven to 220C
Cut salmon fillets into 2cm wide strips and place skin side down on the baking sheet.
Mix remaining ingredients and sprinkle evenly on top of the fish.
Bake for 10 minutes or until cooked as you like it.
Serve with salad - lettuce, tomato, avocado and extra garlic aioli.
This works great with chicken thigh cutlets as well. Takes longer - about an hour in the oven - but you can bake some kumara alongside as well and service with a salad!. Yummy.
