Southern style baked chicken
1 cup sour cream or thick yogurt
1 tablespoon garlic powder
1 tablespoon paprika
1 teaspoon chili powder
Water (up to 3 tablespoons should be enough)
Salt & black pepper
4 chicken thighs, skin removed
Non-stick cooking spray
2 cups panko (Japanese-style) bread crumbs
Pre-heat oven to 180C.

In a bowl, combine the cream or yogurt and spices. Thin this with a little water until you get the consistency of heavy cream, and season with salt and pepper. Add the chicken pieces and coat them well.

Lightly coat a non-stick baking sheet with the cooking spray. Pour the bread crumbs onto a plate.

Toss the chicken thighs in the crumbs one at a time and completely coat them. Place the chicken onto the baking sheet and spray them with cooking spray.

Bake for 20 to 25 minutes, flipping them over halfway through, until the chicken is browned and cooked through.
