Chicken with Sour Cream and Paprika
2 teaspoons oil of your choice – low flavour like canola is best
1 Onion – chopped
1 clove garlic, chopped finely
4 Chicken breast fillets dices into cubes
1 teaspoon chicken stock powder
½ cup sour cream
2 tablespoons water
1-2 teaspoons paprika
1 tablespoon tomato paste
1 red bell pepper (capsicum) and 1 green bell pepper (capsicum) diced
250 grams button mushrooms sliced
Sauté onion and garlic for a few minutes until soft then add chicken and raise the heat a bit. Cook, stirring, until chicken is mostly cooked through.

Add all the remaining ingredients and bring to a gentle simmer. Cook for about 5 minutes until chicken is fully cooked.

Serve over rice or flat noodles.
