Chocolate Rum And Raisin Balls - Gluten Free
Ingredients
200g butter
200g dark chocolate
1/4 cup rum (or 2 tsp rum essence)
2 cups Icing Sugar
1 cup raisins or sultanas, finely chopped
1 cup desiccated coconut
Method
Melt the butter and chocolate together, either in the microwave or over a saucepan of gently simmering water.

Add the rum, Icing Sugar and raisins or sultanas, mixing until smooth and well combined.

Chill the mixture until you can shape it into small balls (approximately the size of a large marble).

Roll the balls in coconut and store in the fridge.

These keep well for a few weeks in the fridge or longer frozen.
